I went shopping yesterday at a different place then I usually buy my food...
I guess I was looking to hard to make sure I wasn't buying the large breed formula...I got home to find that I'd bought the adult formula...

Is there any reason why I shouldn't just feed it to him.. or should I try to save it til he's a year old?

Depends on how old your dog is now and also most dog food does have a date on it, check the date on bag to see if its ok to keep for awhile.

he's 61/2 months... so he's done most of his growing...

Is he neutered? If so at 6 1/2 months old he can start on an adult food IMO.

I agree with coppperbelle. Don't worry about large breed food too much. It's more dense, which can mean you feel a really active little guy a bit less. If there is glucosamine in it, usually the levels are so low it doesn't have an effect.
